Abstract

The ginger rhizome (Zingiber officinale Roscoe) is widely consumed by the Indonesian people and has traditionally been believed to eliminate colds, reduce or prevent influenza, rheumatism and coughing and reduce pain (analgesic) and swelling (anti-inflammatory). Ginger (zingiber officinale) is one of one export commodity that has economic value. Rhizome can function in addition to being a food and beverage ingredient, can also be used as a component ingredient in the manufacture of traditional medicine. In this research, I aim to analyze the quality of the pr\ocess of drying the ginger commodity using gasoline fuel. From this research it is expected to be able to find out the analysis of the effect of temperature in drying time on the reduction in ginger mass and water content, and also the technological development of the medicinal plant industry in rural areas, and can increase added value and rural economic activity. The results of the analysis of the process of drying ginger on the condition of time and temperature have a very significant effect on the water content produced, the higher the time and temperature used, the lower the water content produced, the temperature of 500C for 60 minutes with an initial moisture content of 33.0% to 29, 2%, the temperature of 600C at 60 minutes with an initial moisture content of 33.0% to 26.9%, the temperature of 700C at 60 minutes with an initial moisture content of 33.0% to 25.6%.
